This is what I don't get. Popes are supposed to be infallible. How do they die?

You mean, so modern popes could be regularly sentencing whole countries of millions of people to horrible painful deaths for heresy but doing it secretly and not telling anyone, so no-one can accuse them of being infallible. I admire this cunning. *nods*
